
Organic Stinging Nettle (it grows very easily)

organic Chia seeds, organic pine nuts, pink lake salt,
organic black pepper, garlic (home grown)

into the mortar and pestle

add some lemon, from Jess' old flat mate's neighbour's tree....

a splash of mount Zero olive oil

wash the leaves, being careful not to get stung, scissors help there...

at this point Nada came over and well, we got talking
and I forgot to document
I was in a bit of a trance with the pestle
adding leaves and pummeling away...sorry about that..

It got dark and I cooked up some
swiss brown mushrooms,

adding mung bean fettucini
and stirring in the pesto.
Serving with extra lemon, you know, cause its so yummy.
We ate on the floor cross legged.
Due to the fact N came baring Cherry cake for desert meant
we didn't eat the whole pan. I saved a bowl for 'later',
serving it with a touch of fresh roquette the next day..
delish and so full of iron, so very good for P.M.T.
